For the Chicken:
- 2 large boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper

- 1/2 tsp onion powder
- 1/2 tsp smoked paprika
For the Parmesan Crust:
- 1/2 cup shredded Parmesan cheese
- 1/2 cup shredded Provolone cheese
- 1/4 cup panko breadcrumbs
- 1 tbsp melted butter
- 1 tbsp mayonnaise
- 1 tsp garlic powder
- 1/2 tsp dried oregano
- 1/2 tsp dried parsley
- 1/2 tsp red pepper flakes (optional for heat)
Instructions
Prepare the Chicken:
- Preheat the grill or a stovetop pan over medium heat.
- Brush the chicken breasts with olive oil and season with salt, black pepper, garlic powder, onion powder, and smoked paprika.
- Grill the chicken for about 5-6 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from heat and set aside.
Make the Parmesan Crust:
- In a small bowl, mix Parmesan cheese, Provolone cheese, panko breadcrumbs, melted butter, mayonnaise, garlic powder, oregano, parsley, and red pepper flakes (if using).
Broil the Chicken with the Crust:
- Preheat your oven broiler to high.
- Place the grilled chicken on a baking sheet. Spread the Parmesan crust mixture evenly over the top of each piece.
- Broil for 2-3 minutes or until the cheese is bubbly and slightly golden brown.
Serve Hot:
- Remove from the oven and let it rest for a couple of minutes. Serve with mashed potatoes, steamed veggies, or a side salad.

- You can bake the chicken at 400°F (200°C) for 20-25 minutes if you don’t have a grill.
- For a crispier crust, add an extra tablespoon of panko breadcrumbs.
