Ingredients

Scale
  • 1 lb ground beef (80/20 or lean)
  • 4 medium potatoes (thinly sliced)
  • 1 small onion (finely chopped)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese (optional)
  • 1 tbsp butter (for greasing the baking dish)
  • 1/2 cup crushed crackers or breadcrumbs (optional, for topping)
  • 1 tbsp chopped parsley (for garnish, optional)

Instructions

  • Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter.
  • Cook the Beef: In a skillet over medium heat, cook the ground beef and chopped onion until browned. Drain excess grease. Season with garlic powder, onion powder, salt, pepper, and paprika.
  • Prepare the Sauce: In a bowl, mix the condensed cream of mushroom soup, milk, and sour cream until well combined.
  • Layer the Casserole:
    • Spread half of the sliced potatoes evenly in the baking dish.
    • Add half of the cooked beef mixture.
    • Pour half of the soup mixture over the top and sprinkle with half of the shredded cheese.
    • Repeat the layers with the remaining potatoes, beef, soup mixture, and cheese.
  • Add Topping (Optional): Sprinkle crushed crackers or breadcrumbs over the top for a crispy texture.
  • Bake: Cover with foil and bake for 45 minutes. Remove the foil and bake for another 15-20 minutes until the potatoes are tender and the cheese is bubbly and golden.
  • Serve: Let the casserole rest for 5-10 minutes before serving. Garnish with chopped parsley and enjoy!

Notes

  • Substitute cream of mushroom soup with cream of chicken soup for a different flavor.
  • Add sautéed mushrooms, bell peppers, or corn for extra texture and taste.
  • Use ground turkey or chicken for a lighter version.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days and reheated in the oven.
