- 8 egg roll wrappers
- 8 oz goat cheese, softened
- 2–3 jalapeños, sliced (seeds removed for less heat)
- 1 tablespoon fresh cilantro, chopped (optional)
- 1 egg, beaten (for sealing)
- Oil for frying (or cooking spray for baking)
Instructions
- In a bowl, mix the softened goat cheese with chopped jalapeños and cilantro (if using) until well combined.
- Lay an egg roll wrapper on a clean surface, with one corner pointing towards you.
- Place a spoonful of the goat cheese mixture in the center of the wrapper.
- Brush the edges of the wrapper with the beaten egg to help seal.
- Fold the bottom corner over the filling, then fold in the sides, and roll tightly to seal.
- Repeat with the remaining wrappers and filling.
- For Frying: Heat oil in a deep pan over medium heat. Fry the egg rolls until golden brown, about 3-4 minutes on each side. Drain on paper towels.
- For Baking: Preheat the oven to 400°F (200°C). Place the egg rolls on a baking sheet lined with parchment paper, spray with cooking spray, and bake for 15-20 minutes or until golden and crispy.
