  • 8 oz goat cheese, softened
  • 23 jalapeños, sliced (seeds removed for less heat)
  • 1 tablespoon fresh cilantro, chopped (optional)
  • 1 egg, beaten (for sealing)
  • Oil for frying (or cooking spray for baking)

Instructions

  1. In a bowl, mix the softened goat cheese with chopped jalapeños and cilantro (if using) until well combined.
  2. Lay an egg roll wrapper on a clean surface, with one corner pointing towards you.
  3. Place a spoonful of the goat cheese mixture in the center of the wrapper.
  4. Brush the edges of the wrapper with the beaten egg to help seal.
  5. Fold the bottom corner over the filling, then fold in the sides, and roll tightly to seal.
  6. Repeat with the remaining wrappers and filling.
