- 1/4 cup capsicum (bell pepper, finely chopped)
- 3 garlic cloves (minced)
- 1 green chili (slit)
- 1 tsp soy sauce
- 1 tsp red chili sauce
- 1 tsp vinegar
- 1/2 tsp black pepper powder
- 1/2 tsp garam masala
- 1/2 tsp turmeric powder
- 1/2 tsp salt (adjust to taste)
- 1/2 tsp sugar (optional, for balance)
- 1 tbsp ghee or butter (for extra flavor)
Instructions
- Prepare the Rice: Cook the basmati rice until fluffy. Spread it on a plate and let it cool to prevent stickiness.
- Scramble the Eggs: Heat 1 tbsp oil in a wok or pan. Crack the eggs, scramble them with a pinch of salt and black pepper, and set aside.
- Sauté the Aromatics: In the same pan, add the remaining oil, garlic, and green chili. Sauté for a few seconds until fragrant.
- Cook the Vegetables: Add onions and the white part of the spring onions. Sauté until translucent. Stir in carrots and capsicum, cooking for 2-3 minutes until slightly tender.
- Flavoring: Add soy sauce, red chili sauce, vinegar, garam masala, turmeric, and sugar. Stir well to combine.
- Combine Rice and Eggs: Add the cooked rice and scrambled eggs. Mix everything well while stir-frying on high heat for 2 minutes.
- Final Touch: Sprinkle black pepper and the green part of the spring onions. Drizzle a little ghee or butter for extra flavor and mix well.
- Serve Hot: Enjoy with raita, Manchurian, or a spicy gravy.
